Plum, Rosemary & Pomegranate Balsamic Roast Chicken

This roast chicken recipe is so easy, it’s almost failproof. Even the people who think they “can’t cook”-you can make this chicken. It is beautiful, delicious, and perfect for entertaining.

This chicken is perfect for entertaining because it is a one stop shop- you only need one pan and you’re good to go. There are a lot of variations you can make with this, so you can follow my exact recipe, or improvise a bit-it’s pretty hard to mess up!

What you will need: 

-a roasting pan

-oven preheated to 450 degrees

Ingredients:

  • 1 organic chicken
  • 3 plums
  • 4 sprigs of rosemary
  • 1 tbsp ghee butter or olive oil (or enough to get a layer on your chicken)
  • 1/2 tbsp sea salt
  • 1/2 tbsp pepper
  • 1/4 cup of pomegranate balsamic vinegar (or regular balsamic)

Directions:

Preheat oven to 450 degrees F. Thoroughly rinse your chicken with water, pat dry, and place into your roasting pan. Rub with olive oil or ghee butter and sprinkle with sea salt and pepper. Place two sprigs of rosemary inside of the open cavity of the chicken, put into the oven for 20 minutes. Next, remove from the oven and brush with some of the pomegranate balsamic vinegar and sprinkle with more rosemary. Cut up your plums into slices and place them on top of and around the chicken in the pan. Roast for 20 more minutes. Take out and brush with a bit more oil and balsamic and place back into the oven for 25 more minutes or until cooked.

When you serve the chicken, spoon juices and roasted plums on top. Enjoy!
