If you’re seeking the comfort of warm oatmeal for breakfast but trying to avoid grains- this recipe is for you.
Adapted from Wicked Good Kitchen 3-minute porridge recipe
Ingredients:
- 6 tbsp organic unsweetened shredded coconut
- 3 tbsp cashew meal or almond meal
- 2 tbsp flaxseed meal (golden or regular)
- 3/4 cup unsweetened dairy-free milk (almond, coconut, cashew etc.)
- 1 tsp vanilla extract
- pinch of sea salt
- 1 tsp cinnamon
Directions:
On the stove top, bring your milk (I used almond milk) to a boil. Once the milk has started boiling, remove from heat and stir in the remainder of the ingredients. Once everything is combined, put your mixture back onto the stove for about two minutes to let everything thicken and cook together.
Transfer to a bowl and top with anything your heart desires! Some good options are: walnuts, honey, cinnamon, coconut flakes, goji berries, dried mulberries, fresh berries.
Here I topped it with peach, fig, walnut and rose:

If your porridge gets too thick, add some extra milk. Enjoy!
