Fudgey dark chocolate espresso brownie bites. Grain-free, flourless, dairy-free, refined sugar-free and AMAZING. Need I say more?

I was looking for a simple recipe for brownies when I stumbled upon this fudge brownie recipe. I decided to make them espresso brownies and I even added some walnuts-this is totally optional though of course.
- 4 eggs
- 1 cup raw cacao powder (unsweetened)
- 1/4 cup maple syrup
- 1/3 cup coconut oil
- 2 teaspoons vanilla extract
- 1 cup crushed walnuts (optional)
- 2 tbsp ground espresso beans (optional)
This recipe is intended for a 4 x 8 loaf pan, which is totally fine, but I used a mini muffin tin to make them “brownie bites”.
Preheat oven to 350 degrees F. Mix together all ingredients and pour into a greased pan. Bake for 20-25 minutes. Enjoy!
