Hazelnut Crepes With Roasted pineapple yogurt, buckwheat sprinkles, and salted caramel bananas (VEGAN + GRAIN-FREE)

This breakfast from a few Sundays ago may go down as one of the best I’ve ever had. I had so much fun creating these recipes– I love to make things up as I go, seeing what I have on hand, thinking about which ingredients would taste good together, look good together, and make me feel good—which is why everything is free of gluten, grains, refined sugar, and dairy. There’s a lot going on here– feel free to make as many of the sides/toppings as you’d like…you can also simply make the crepes and fill them with whatever your heart desires. Enjoy!

Chipotle Ranch Chicken Salad

I love making a dairy-free chipotle ranch dressing– so I figured why not spice up a chicken salad with the same delicious flavors? This recipe is SO easy… and a lifesaver to have on hand in the fridge when you’re hungry for a snack or want to throw together a quick lunch. IMG_3138.JPG

Collagen Pancakes

How have I waited this long to try the whole “3 ingredient” pancake thing? I feel like I’ve been doing it all wrong thus far. For a while, I had a bit of sensitivity to bananas so I avoided these kinds of recipes, but after reintroducing them and feeling a-okay, I decided to give banana pancakes a shot. I used the classic recipe combo of banana, oats and egg, (I subbed egg whites since egg yolks trigger my hormonal acne) and I added some collagen peptides- these were ridiculously good. Thai Coconut Curry

Thai curry is my favorite ‘last minute dinner’. I like to always have a few cans of coconut milk & jars of thai curry paste in my pantry for nights when I don’t know what to cook and I’m feeling extra lazy. The great part about a curry is you can sort of throw in whatever you’d like (the world is your oyster! ) It’s perfect for a “fridge clean out” extravaganza. I don’t know that my recipe is the most authentic thing in the world, but it’s how I’ve come to enjoy it and it’s very simple.
