Oat Waffles

These oat waffles have been on repeat in the Vibrant & Pure kitchen as of late. They are so easy to make and seriously good.

Oat Waffles:

Serves 2

3/4 cup GF oats (blended into a flour)

2 ripe bananas

3 eggs (or egg whites)

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

pinch of sea salt

1 scoop of collagen (optional)

*If adding collagen, add 1 tablespoon of dairy free milk

 

You can whip this batter up by hand, but I highly recommend simply using a high speed blender. Start with the oats to blend them into a flour, then add the rest of the ingredients to your high speed blender, and blend on high until the ingredients are fully combined.

Finally, grease your waffle maker and pour in the batter to cook. Recipe should make 2 large or 4 smaller waffles.

Collagen Pancakes

How have I waited this long to try the whole “3 ingredient” pancake thing? I feel like I’ve been doing it all wrong thus far. For a while, I had a bit of sensitivity to bananas so I avoided these kinds of recipes, but after reintroducing them and feeling a-okay, I decided to give banana pancakes a shot. I used the classic recipe combo of banana, oats and egg, (I subbed egg whites since egg yolks trigger my hormonal acne) and I added some collagen peptides- these were ridiculously good. Thai Coconut Curry

Thai curry is my favorite ‘last minute dinner’. I like to always have a few cans of coconut milk & jars of thai curry paste in my pantry for nights when I don’t know what to cook and I’m feeling extra lazy. The great part about a curry is you can sort of throw in whatever you’d like (the world is your oyster! ) It’s perfect for a “fridge clean out” extravaganza. I don’t know that my recipe is the most authentic thing in the world, but it’s how I’ve come to enjoy it and it’s very simple. Lentil Burgers

These lentil burgers are so delicious and versatile, they have quickly become a staple in my home (my boyfriend begs me to make them every single week). So versatile, in fact, that these ‘burgers’ don’t have to be eaten like a burger at all. I often simply throw them in a salad or break them up into pieces mimicking a meatball of sorts. They’re a great form of plant based protein, and perfect for meal prep. Make ahead and store them in the fridge for lunches all week!
