To say my fridge always looks like this would be a big old lie; here’s the truth: organization has never been my strong suit. In saying that, I want to shift gears and explain that even if something has never been your “strong suit” you can make it as strong as you’d like, you just have to make the effort. We often pigeon hole ourselves and define who we are based on long practiced habits- but guess what? They’re just habits and all habits can be changed. We can always change the status quo and decide to do whatever we want to do or be whoever we want to be through intention. I make the effort every day to try to be more organized, I’ll research organizational blogs or pick up little tips from my peers and adopt them- it’s always a work in progress.

Okay, enough about my habits. The point is: I’ve finally organized my fridge and gotten to a place where I’m better equipped to keep it that way. I will share with you some organizational tips, plus the items I always have on hand.

Thai Coconut Curry

Thai curry is my favorite ‘last minute dinner’. I like to always have a few cans of coconut milk & jars of thai curry paste in my pantry for nights when I don’t know what to cook and I’m feeling extra lazy. The great part about a curry is you can sort of throw in whatever you’d like (the world is your oyster! ) It’s perfect for a “fridge clean out” extravaganza. I don’t know that my recipe is the most authentic thing in the world, but it’s how I’ve come to enjoy it and it’s very simple. Lentil Burgers

These lentil burgers are so delicious and versatile, they have quickly become a staple in my home (my boyfriend begs me to make them every single week). So versatile, in fact, that these ‘burgers’ don’t have to be eaten like a burger at all. I often simply throw them in a salad or break them up into pieces mimicking a meatball of sorts. They’re a great form of plant based protein, and perfect for meal prep. Make ahead and store them in the fridge for lunches all week!

Whether it’s meat free Monday, or you just want to switch things up from your typical taco experience, these chipotle cauliflower tacos are going to make your next #tacotuesday a memorable one. Fall is upon us, and I for one am excited to break out my warmer spices and make some heartier breakfasts. You don’t always think of sweet potato as being a breakfast food, but I have found that this bowl is the perfect thing to get you going, especially on a brisk fall morning.
