- 1 zucchini
- 1 peach
- tomatoes of your choosing
- olive oil
- sea salt
First off, preheat your oven to 400 degrees. On a grill pan, place sliced peaches on their sides. Let these cook for about 15 minutes. Next, using either a spiralizer or a vegetable peeler, create zucchini noodles/ribbons. While your peaches are baking, chop up tomatoes and pistachios. Finally, toss all of your ingredients in a bowl with olive oil and sea salt. Enjoy!
