Cinnamon Toast Crunch (Vegan + Gluten-Free)

This crunchy cinnamon sugar flavored cereal makes me oh so nostalgic. I wanted to create a vegan gluten free cereal with very few ingredients and I’m so happy to say it was a success! With only five ingredients, this dough is super easy to whip up whenever you’re in the mood for some homemade cereal.

INGREDIENTS:

2 cups oat flour

2 chia eggs (3 tbsp ground chia + 6 tbsp water, let sit for 5 minutes)

2 tablespoons softened coconut oil

1/4 cup + 2 tablespoons coconut sugar

1 tablespoon cinnamon

pinch of sea salt

 

** I think you could sub the oat flour with almond flour or GF all purpose flour, I just can’t say for sure as I haven’t tried it

DIRECTIONS:

 

Preheat your oven to 350 degrees F.

 

Mix all ingredients together in a bowl and work it with your hands until a dough forms. Roll out the dough until it’s as thin as possible, then slice it into little squares. Spread the little squares out on a parchment lined baking sheet and bake for 15-20 minutes. Mine took 20 minutes, but everyone’s ovens are different– check on them after 15 minutes–they should be nice and browned and crunchy. Sprinkle with some more coconut sugar and cinnamon if you like, then serve with milk of your choice!

  1. This is amazing!! I made some this morning and it tastes just like Cinnamon Toast Crunch! I have a diagnoses which doesn’t allow me to eat many refined sugars or flours. This is the first time I have had “sugary” cereal in years. Thank you so much!
