I love this recipe because it’s basically like eating oatmeal for breakfast but in pancake form (which is always a good thing.) Made simply with ripe banana and oats, plus some baking powder to make them extra fluffy!

Makes about 10 pancakes

2 cups oat milk (or any plant based milk)

2 cup oats (blended into a flour)

2 ripe bananas

2 teaspoons baking powder

1/2 tablespoon maple syrup

1/4 teaspoon sea salt

DIRECTIONS:

Add oats to a high speed blender and blend until a flour forms. Next, add the remaining ingredients and blend until a smooth batter forms. Cook as you would any pancake. I like to either add chocolate chips, or drizzle with some maple syrup and add berries.
